2017 WIllamette Valley Chardonnay Sandi

Tasting Note:

The 2017 Willamette Valley Chardonnay Sandi is again the wine with a surplus of charm, density, power and grace. The aromatics of meyer lemon curd, almond pastry, and white flowers are woven seamlessly with ginger, honey and cardamom. The palate is dry, vivid and creamy, as dense flavors of dried yellow citrus, ginger toast, oatmeal and smokey chalk move fluidly as an integrated whole. As firmly as it is structured, the extract is satin smooth, and the wine finishes imbued with minerality, long in silken waves.

Vinification Notes:

Each unique lot of Chardonnay was pressed hard as whole clusters and the juice was settled overnight. Some lots were allowed to hyperoxidize before a small dose of SO2 was added, other lots were sulfured in the press pan. After transferring to barrels for fermentation, the juice was judiciously chaptalized. Native yeasts completed fermentation and full malolactic conversion took place. After one year in 55% new French oak barrels, this wine was blended and transferred to stainless steel for a second winter on lees. After nearly six months in steel on lees, the wine was lightly fined with bentonite in preparation for bottling unfiltered. 2.5 barrels produced.
