2017 White Label Willamette Valley Chardonnay

Tasting Notes:

The 2017 White Label Chardonnay is a selection of two and a half barrels from Seven Springs Vineyard which benefited from twice the lees, and more frequent stirring during aging.

Presenting opulent aromatics of lemon curd, pear pastry, sweet ginger and hazelnut waffle. The concentration of the palate is superlative, it is dry, textural and dense with notes of fresh lemon curd and almond meal, mandarin crème and honey, framed by spice and buoyed by refreshing acidity. The finish is long, polished and pillowy.

Vineyard Notes:

100% Willamette Valley Chardonnay from Seven Spring Vineyard, South Blocks B & E

Biodynamically farmed, non-irrigated Dijon clone 95 and 76

Planted in Jory and Nekia silty clay loam soils over volcanic basalt in 2012 on 101-14 rootstock

Vines spaced 4x6, facing southeast and ranging from 500ft-550ft on a 2.7%-5.5% slope

Vinification Notes:

Both blocks of Chardonnay from Seven Springs Vineyard were pressed hard as whole clusters. The juice was settled overnight and allowed to hyperoxidize before a small dose of SO2 was added. Extra lees from the settling tank was transferred with the juice to barrel for fermentation. The juice was lightly chaptalized and fermentation completed with native yeasts. These barrels were stirred weekly until malolactic conversion completed. After one year in 44% new French oak barrels, the wine was blended in stainless steel for a second winter on lees. After nearly six months in steel on lees, a light fining with bentonite prepared the wine to be bottled unfiltered. 2.25 barrels produced.
