2017 The Eyrie Vineyards Chardonnay


Tasting Notes:

Profound and riveting aromatics of flint, musk melon, lemon pound cake, lime chiffon, pear pastry, salted almond, and honey suckle. On the palate, there is a weightlessness and polish to the wine, it is bone dry with good natural acidity. Flavors of follow the nose, with savory freshness and a long finish of warm minerality, sweet ginger, citrus, orchard fruit.

Vineyard Notes:

100% Dundee Hills Chardonnay from The Eyrie Vineyards

Organically farmed, non-irrigated 1968-planted Draper clone

Planted in Jory silty clay loam soils over volcanic basalt in 1968 on own-roots

Vines spaced 9x5, facing south and sits around 350ft on a 9% slope

Vinification Notes:

One 1/2 ton of whole cluster Chardonnay from The Eyrie Vineyards was pressed hard the day it was picked. The spectacularly concentrated juice was settled overnight and allowed to hyperoxide before a small dose of SO2 was added. After transferring to barrel for fermentation, the juice was lightly chaptalized and fermentation commenced with native yeasts. Full malolactic fermentation occurred, selected yeasts completed fermentation. After one year in one once-filled French oak barrel, the wine was transferred to stainless steel for a second winter on lees. After nearly six months in steel on lees, a light fining with bentonite prepared the wine to be bottled unfiltered. 1 barrel produced
