Tasting Notes:

There is a subtle richness to the Seven Springs Vineyard, as vivid aromatics of fresh lemon curd, key lime, golden florals, and minerals are warmed with fine-grained wood spice. The palate is dry, with bright acidity and flavors of mixed citrus, golden apples and ginger brioche. There is density to the flavors and fine texture as the wine finishes mineral and long.

Vineyard Notes:

100% Eola-Amity Hills Chardonnay from Seven Springs Vineyard, South Blocks B & E

Biodynamically farmed, non-irrigated Dijon clone 95 and 76 Chardonnay

Planted in Jory and Nekia silty clay loam soils over volcanic basalt in 2012 on 101-14 rootstock

Vines spaced 4x6, facing southeast and ranging from 500ft-550ft on a 2.7%-5.5% slope

Vinification Notes:

Each clone of Chardonnay from Seven Springs Vineyard was pressed hard as whole clusters. The juice was settled overnight and allowed to hyperoxidize before a small dose of SO2 was added. After transferring to barrel for fermentation, the juice was lightly chaptalized and fermentation commenced with native yeasts and full malolactic conversion occurred. Selected yeasts completed fermentation in a portion of the barrels. After one year in 33% new French oak barrels, the wine was blended and transferred to stainless steel for a second winter on lees. After nearly six months in steel on lees, a light fining with bentonite prepared the wine to be bottled unfiltered. 3 barrels produced.
